This Japanese cleaver knife is meant for Chef's duties such as vegetable and fruit chopping/slicing, beef, poultry or fish cutting. Not intended for hog or lamb splitting or chopping through bones.
The sharp Chrome Molybdenum Stainless Steel blade is constructed full tang with beautiful hardwood handle secured with brass rivets for strength & durability.
Knife measures 12 5/8" inches long overall with an 8" inch by 3 3/8" inch blade. Blade is marked Joyce Chen Chrome Molybdenum Steel on one side and Japan with mark on the obverse.

Thank you for answering my question. Do you think possibly unused? I have one of these knives that I’ve had for at least 40 years but it was used for opening coconuts and now it’s got chips in it. I did use it to split Cornish hen and chicken. It had a lot of use until I lent it to somebody for coconuts. Do you have any idea how old this is?
