200 years ago, the bays and inlets around Tampa were Havens for pirates who buried their treasures on our Sandy Shores. While the pirates are only a dusty memory, modern Tampa is still rich in treasures. No longer must we dig to find them, for they are all around us. In 1961 the junior league of Tampa published the Gasparilla cookbook, named for the ship commanded by our most infamous pirate, Jose Gaspar. This book featured old family recipes, richly representative of Tampa, Southern Heritage, and diverse ethnic backgrounds. As lifestyles changed and faster, and less complex recipes became the order of the day, a second cookbook, a taste of Tampa, was published in 1978. Although cooking styles continue to evolve, the foods we enjoy remain much the same. In Tampa, we have always made full use of the bounty for fresh fruits and vegetables, grown year-round and of the many species of fish and shellfish harvested from our waters. Tampa treasures offers an exciting contemporary cuisine that has been enhanced by journey from past to present. These recipes are an intriguing blend of the rich assumption and the light and wonderful. Also included our truly classic Tampa recipe selected from the Gasparilla cookbook.
