"There is a great interest in raising small flocks [of ducks and geese] as a sideline or Hobby. To raise ducks and geese on a small scale requires little investment. Geese are excellent foragers, and with a good source of pasture require only a minimum of supplements and labor. Many waterfowl are raised primarily for exhibition purposes. It is important that before starting the production of waterfowl, the processing and marketing aspect of the industry be investigated
... Well-fleshed, moderately-fat geese and ducks are nutritious and distinctive in flavor. When grown rapidly and processed attractively, this product, well packaged and fast -frozen has a good demand at firm prices..."
